Description
I used to drive down to a dodgy part of town to visit a barbecue stand. The place was known for the pulled pork, the baked beans, but especially for the sweet potato pie. The young guys who lingered in the area gave me stares that silently warned me that I was where I was on their terms. I also had a kind of pass because I always called ahead and Mom and Pop would insure my safe passage. Inside, I was welcomed like family. The Mrs. always made sure my order had more than a little bit extra. Ultimately, the guys outside viewed me as a guest of the house.
Louise's dad gave her some sweet potato starts. She planted them in an iron apple butter kettle on our deck. We had pretty foliage all summer long. The other day she dug these up. I think we'll make a sweet potato pie.
To all who have wondered: That sweet potato pie was among the best I ever made. It is a savory pie, not a dessert pie. The crust is made with cheese to add to the savoriness. The sweet potatoes are still sweet but the pie is made to be served as a side dish to your meal. I love to cook as much as I love to make pictures. I feel cooking is a place in our lives where everyone has the opportunity to be an artist. When someone tells me they wish they could be an artist I always ask if they cook and tell them my feelings on food and cooking. We always part with a smile. I'd like to offer the sweet potato pie recipe to anyone who would like it. Just send me an email and I'll send it back.
